Chardonnay is often know as the marmite of wines,  a love it or hate it affair. Reason being is that over the past 2 decades there has been a lot of experimenting with the varietal and issues with overly oaking the wine. This varietal develops extremely well with some oak contact. However, many palats do not like the overly oak driven wines and thus has seen a huge switch in the market from big buttery styles, to more balanced wines with a decent back bone of acidity. 

Fun Fact: We often ask: 'Do you like Chardonnay?' Customer: 'No'. Us: 'Well do you like Chablis?' Customer: 'Yes we love it!'. Us: 'Chardonnay is Chablis.' The perception of a Chardonnay to most has moved stylistically to a bold, heavily oaked wine but actually, there are elegent, unoaked styles of which are some of the best wines in the world.
